Intramuscular fatty acid composition of 92 fighting bulls (Seville, spring, n=44; Pamplona, summer, n=48) was analysed. All animals were reared for about four years in South-Western Spain ("Dehesa system"). The bulls remained on the pasture until they were moved to the bullring. Some months before slaughter, animals were fed concentrate as a supplement. The intramuscular fat of bulls slaughtered at summer showed higher content of SFA and MUFA than animals slaughtered at spring. Furthermore, PUFA content was higher in animals slaughtered at spring in Seville than Pamplona. The intake of concentrate and selective mobilization of PUFA in animals slaughtered in summer justify these results.
