Food safety is of crucial importance to the consumer, food industry and the economy. Despite significant investments, the frequency of occurrence of foodborne diseases are still increasing, and it might be, or more statistics or real increase. Foodborne diseases caused by microbiological hazards are a public health problem in Europe and worldwide. However, serious concern is the fact that 50 to 87% of reported foodborne diseases in many countries around the world, was associated with the preparation of food in households. It is obvious that consumers are not clearly informed about food, especially on storage conditions, expiration date, preparation, etc. Also, the reason for the increased incidence of disease is the fact that they lose some of the traditional knowledge and skills related to food preparation and consumption. Measures taken by the governments and food producers, has led in recent years to increase consumer confidence in food safety. It’s still essential for risk managers to communicate that they are reducing or mitigating the risks. They also have to make sure that actions match their words. It is obvious that the consumer is the one that is not sufficiently informed enough on ensuring safe food. It is necessary to define as to who is responsible to educate consumers with food safety principals and which method of educating would be successful. With the consumer outside the food safety circle we do not treat food safety from farm to table.
