At the world and also at the domestic [Serbian] market, the demand and comsuption of cold pressed oils are increasing. The influence of impurities and hull in the material for pressing on sensory quality (appearance, odour, taste, flavour and colour) of cold pressed sunflower oil was investigated. It was found that the impurities and hull in the initial material have a very unfavourable influence on the sensory quality of sunflower oil obtained by pressing on screw press. The influence of different content of impurities and hull on the colour of the oil was investigated by determining the transparence, content of total carotenoids and content of total chlorophylls, beside the sensory analysis. The presence of impurities and hull influences the increase of content of total pigments, carotenoids and chlorophylls, and therefore the decrease of transparence of cold pressed sunflower oil.
