Shelling red rice (SRR) compared to the common one contains more proteins (9.90-10.50% against 8.60-8.78%), dietary fibers (2-35-2.78% against 1.38-1.60%) and minerals (1.70-2.05% against 1.10-1.32%). A process scheme of isolating from the total grain mass by using a color sorter was developed. As is shown, SRR produced according to this scheme in organoleptic and physico-chemical characteristics absolutely meets the requirements imposed on the quality of plant feedstock for BAA production, and in the safety parameters meet the sanitary standards. To produce BAA, SRR is treated in a rotor-roll disintegrator. The optimum condition for production of BAA providing its microbiological purity and inactivation of lipase and lipoxygenase is determined: t 50 degrees C, pressure 40 MPa, the frequency of chemomechanical treatment 128 Hz, the rotor speed 16 rev./s. The resultant BAA Risovaya is characterized by high food value, good organoleptic parameters, exhibits antioxidant, antitoxic, hepatoprotective properties, has a high water-retaining, water-fixing and foaming ability. BAA preserves availability if consumer package without opening within not more than 12 months, after opening – not more than 30 days, in manufacturing package – not more than 8 months. BAA Risovaya is recommended for using in the production of functional food products
