This research was carried out to determine the total carbohydrate, protein, mineral and phenolic compounds (total phenolic compounds, total flavanols, total flavonols and anthocyanins (only in red grape samples) of grape and grape products including fresh berries of 4 wine grape cultivars (Emir, Kalecik karası, Narince and Öküzgözü); raisin of Karadimrit and Sultani çekirdeksiz; wines of Emir, Kalecik karası; Narince and Öküzgözü, vinegar, molasses and red grape juice. In this research, analyses of total carbohydrate and protein were determined by anthron and Kjeldahl methods, respectively.

Toplam karbonhidrat, protein, mineral madde ve fenolik bileşik (toplam fenolik bileşik, toplam flavanol, toplam flavonol ve kırmızı renkli çeşitlerde antosiyanin) içeriklerinin belirlenmesi amacıyla gerçekleştirilen bu araştırmada materyal olarak Emir, Kalecik Karası, Narince ve Öküzgözü yerli üzüm çeşitleri ile bu çeşitlerden elde edilen şaraplar, Karadimrit ve Sultani Çekirdeksiz üzüm çeşitlerinden elde edilen kuru üzümler ile pekmez, sirke ve üzüm suyu kullanılmıştır.
