The common bean - Ph. vulgaris L. is one of the low income Bulgarian population basic diet. Common beans seeds are a remarkable protein source and are also a high carbohydrate and considerable fibre content. The results were obtained from collected and analyzed local germplasm from different owners of Troyan region. The most important trait for its nutritional value is the protein content, and protein fractions. The content of protein in seeds was from 23.42% to 30.23%. Content of lysin - 1.32-2.25%, % of lysin in protein - 5.66-9.26%, fibre in seeds - 1.28-3.09%, and ash - 1.51 to 4.84% were found to be the most important components in bean seeds chemical composition. The most interesting local accessions were analyzed for protein fractions component, as a water soluble and salt-soluble fractions also were detected.
