Morfologia de grão e qualidade protéica em variedades de arroz vermelho

Portuguese. O arroz vermelho tem sua importância na culinária, cultura e na economia da região nordeste, podendo ser uma alternativa para pequenos agricultores e para agricultura de subsistência. Este trabalho teve por objetivo caracterizar a morfologia dos grãos de arroz (comprimento, largura e relação comprimento/largura), a proteína bruta e as frações protéicas (prolamina, albumina e globulina, glutelina). Foram estudadas seis variedades de arroz vermelho e duas variedades de arroz branco. No estado do Espírito Santo, foram coletadas as variedades Vermelho 1 e Vermelho 2, em Minas Gerais Vermelho 3 e Vermelho 4 e no Rio de Janeiro, Vermelho grande e Vermelho Pequeno. As variedades de arroz branco (IR 08, Caiapó) foram utilizadas como testemunhas. Foram feitas as medições dos grãos em relação ao comprimento/largura e foram extraídas a proteína bruta e as frações protéicas de todas as variedades. Houve uma grande variação nas medidas de comprimento e largura como também nos teores protéicos. O teor protéico do arroz vermelho pode ser superior ao do arroz branco e grãos provenientes do mesmo local de cultivo possuem relações de comprimento e largura e teores protéicos similares.

English. Red rice has its importance in the culinary art, culture and in the economy of the northeast region and it can be an alternative for small farmers and for the subsistence agriculture. This text aimed at characterizing the morphology of the rice grains (length, width and length/width ratio), the crude protein and the protein fractions (prolamin, albumin and globulin, glutelin). Six varieties of red rice and two of white rice were studied. The varieties Red 1 and Red 2 were collected in the state of Espírito Santo, Red 3 and Red 4 in Minas Gerais and big Red and small Red were collected in Rio de Janeiro. The varieties of white rice (IR 08, Caiapó) were used as checks. The measurements of the grains were performed in relation to length/width and the crude protein and the protein fractions were extracted from all the varieties. There was a great variation in the length and width measurements as well as in the protein contents. The protein content of the red rice can be superior to that of the white rice and grains that come from the same cultivation site have length and width ratio and similar protein contents.
