Due to population incensement and changing of people dietary pattern consumption of vegetable oils is being rising. Unfortunately, due to an imbalance incensement of oil production with population growth and also considering increased share of non-conventional oil consumption per capita during the past years, per capita oil consumption of about 2.5 kg in 1961 with the country's 20 million population has been reached to 16.5 kg per capita with a population equivalent to 70 million people in 2005. Of the oil consumption in this year over a million tons of imports and the rest is supplied from domestic sources. Therefore considering that over 85 percent of the country's oil requirements are supplied through imports, and every year a significant portion of the budget share of buying oil and oil byproducts, such as seed meal, incensement of oil seed production in our country is very important. Therefore, in order to exploit the existing potential, is necessary to use of new knowledge to increase production per unit area and increase the quantity and quality of oil. Based on these requirements this book was published containing general information and details about the important oil seeds. This information can be useful for farmers those who are in the front line of production and also are useful for researchers, students and extension experts. The present book that is outcome of research studies and several years experience in research of authors in department of agricultural engineering research and seed breeding research department, is a small step in the cultivation and development of oilseeds in the country. This collection has been trying for about a major oil seed, so at first has discussed about the importance and properties of oil seeds, then about cultivated area in country and world level has been given some information in brief including some pictures and finally about planting and harvesting operation has some information. Also in an intercultural operation part, has described about water requirements and irrigation methods with pictures and illustrates. This instruction had only help aspects, therefore in each region cultivar, climatic and soil conditions in the area have to be considered.
