Designing and making of dough sheeter for tunnel oven to produce flat bread.

The rise of bakery products consumption due to population,s growing , caused need for planning and designing industries bread units. Mechanical processing equipment reduce the time and labour involved in manual methods. Dough dividing, rounding and sheeting are important unit operations in breadmaking lines. In this research , standard system for dough dividing, rounding and sheeting were investigated. Parameters for designing and making of divider, rounder and sheeter that suitable for soft dough were calculated. Results showed that efficient dividing was achieved by injection of soft dough by extrusion. An extruder consists of a screw conveyor and wire cut was made for dividing. Rounding was done by a screw conveyor and a drum . Sheeting of soft dough has done by rotating of two grooved roll that formed bread loaf. Designed systems not only were the easiest , but also were the best for keeping dough and bread properties.
