The most informative characteristics of grain quality in spring wheat are found to be a hyaline state, glutin content and bread volume. Average level of the indices considered is defined by humidity and is in reverse dependence on the hydrothermic coefficient during the period of spring wheat growth cycle. Temperature conditions are of far less importance. The equations of the relation received are used to singling out the zones with various agroclimatic support of grain quality in spring wheat. The territories of the control and the lower Povolzh'e (the Volga River area), flat regions of Daghestan and most of the provisions of Kazakhstan belong to the agroclimatic zone with the most high characteristics of technological properties of the grain.
