Process of making alkalized eggs involves using lead salt to prevent the self liquefaction of coagulated egg white. The analysis of alkalized eggs, producing and selling in Thailand, was conducted during 1986-1988. Lead contamination ranging from 0.91-81.76 mg/kg was found in every sample. Since lead is a heavy metal which is harzadous to the human body, the process of alkalized eggs using lead salts should be avoided. For this reason a study on the process of making alkalized eggs without using lead salts was performed. In this study two sets of the experiment were conducted in which each one was divided into four different treatments. Five litres of the egg immerging solution from a mixture of black tea 80 g, table salt 500 g, soda ash (Na2CO3) 300 g, calcium oxide (CaO) 750g and tap water 5 litres was used in each of all treatments. In the first set, the solution of four treatments were added with lead oxide (PbO) in concentration of 0, 30, 300 and 3,000 mg/L respectively. The second set, copper oxide (CuO), zinc sulfide (ZnS), zinc sulfate (ZnSO47H2O) and zinc oxide (ZnO) in concentration of 1,000 mg/L was added in the solution of another 4 treatments respectively. 100 fresh duck eggs were immerged in every treatment. After 20 days of observation, the result of the treatment having concentration of zinc oxide 1,000 mg/L was satisfied. The yield of alkalized eggs was 79.50%. Lead contamination was not found while zinc content, trace element, could be detected in these alkalized eggs.
