English. The research use durian which is from Luwu regency, while the durian seeds are obtained from the marchants in Jalan Monginsidi, Ujung Pandang. The seeds which are used have been stored for 6 days, than the treatment is given as follows : A) the Maizena concentration added (w/w) consists of 0 percent (control) = A0, 5 percent = A1, 10 percent A2 and 15 percent = A3. B) The margarine concentration added (w/w) consists of 0 percent (control) = B0, and 1 percent = B1.

BAHASA: Penelitian ini menggunakan durian yang berasal dari Kabupaten Luwu, sedangkan biji duriannya diperoleh dari pedagang jajanan di Jalan Monginsidi, Ujung Pandang. Biji durian yang digunakan maksimum telah tersimpan (dikumpul) selama 6 hari, kemudian diberi perlakuan sebagai berikut : (A) Konsentrasi maizena yang ditambahkan (b/b) terdiri dari; 0 persen (kontrol) = A0, 5 persen = A1, 10 persen = A2 dan 15 persen = A3. (B) Konsentrasi margarin yang ditambahkan (b/b) terdiri dari; 0 persen (kontrol) = B0, dan 1 persen B1.
