Self sufficient project of clove, programmed in 1970 had influenced the development of clove industry in Indonesia such as clove extensification to various types of soil and environments with some consequences on final products quality of the cloves. Quality of cloves influenced by many factors such as environment, clove varieties and post harvest handlings. The higher the altitude of clove gardens, the lower the ash and eugenol contents of flowers but the higher the eugenol acetate of the clove oil. Total clove oil content increases following the increase of altitude of gardens, however, it goes down again when the altitude higher than 800 m asl. Effect of rainfall occurs on the production and quality of cloves used for kretek. Time of harvesting which is associated with maturity of flowers also affects the clove quality. Early and/or late harvest give low quality of dry clove. Old flowers produce high oil and eugenol contents of raw fiber material and eugenol acetate of its oil is low. Fermentation prior to drying shortens time of drying, but however long storage combined with high storing temperature reduces oil and eugenol contents as well produces dark dry clove. Drying of cloves with KPES (artificial sun dried cabinet) gives less silicate content compared to traditional method. During the storage period, the oil and eugenol acetate content decreased, but the eugenol content increased.
