Effects of sodium chloride, propionic acid and ammonium hydroxide on growth of Aspergillus flavus on corn and Aflatoxin production.

Inhibitory effects on growth and aflatoxin production of A. flavus in ground corn by sodium chloride, propionic acid and ammonium hydroxide were examined. Sodium chloride at concentrations of 40 and 80 mg/g could inhibit only aflatoxin production while 120 mg/g of sodium chloride inhibited both growth and aflatoxin production of A. flavus in corn after 7 and 14 days of incubation. The additional propionic acid to the corn at concentrations of 500, 1000 and 1500 ug/g enhanced the production aflatoxin whereas 2000 and 2500 ug/g of propionic acid inhibited the formation of aflatoxin. Two parts per thousand of ammonium hydroxide reduced the production of aflatoxin in corn by 45 percnets and 60 percents at days 7 and 14, respectively while 0.5, 1.0 and 1.5 percent ammonium hydroxide completely inhibited the production of aflatoxin. The addition of ammonium hydroxide in the 7 and 14 day-old cultures showed that the higher the concentration used, the lower the aflatoxin detected.
