The aim of this work was to perform a preliminary investigation on yield and efficiency of meat processing and cut-up. The study was done in a poultry slaughterhouse of Cataluya (Spain). It included 3,010 broiler chickens, representing 4 commercial flocks of different origin. Eviscerated yields of breast meat, thigh, drumstick muscles, wings, legs, skin and fat, heart, liver and gizzard were calculated. Significant influence of carcasses weight and yield was found. The yield was approximately 83.6 percent. The study values were not very different from other authors. Nevertheless, biological variations seem to be important on carcasses yield among different groups.
