[The methodologies and the differences determined by the environment and the variety on flours (ash and protein content and sedimentation test, SDS), semolina (colour measured on brown and yellow indexes) and pasta (quality evaluation on cooked pasta) of the material grown in the years 1987-88 and 1990-91 were described in previous papers.
