The investigated string bean and carrot varieties had low content of nitrites on the average and relatively high content of nitrates. Specific varietal quality regarding the content of nitrites and nitrates is significant in the investigated string bean varieties but insignificant in the investigated carrot varieties which are similar regarding the structure and quantity of phloem. In both investigated varieties climate conditions, higher temperature and the total quantity of precipitation significantly reduced the content of nitrates.
