The aims of the yeast biomass research program are: collection of data on the composition of yeast biomass: production of yeast strains of high methionine content by the application of mutation and protoplast fusion technique, selection of high methionine content yeast strains, increasing the methionine content of yeast proteins by enzymic peptide modification, development of the optimal conditions of yeast growing, extraction of yeast protein and its freeing from nucleic acid, biochemical state and biological value of yeast protein, utilization of the various yeast products in different food items, solution of analytical problems related to utilization. As the result of the research work the biotechnological, nutritional and technological values were optimized and methods were developed for the utilization of the yeast protein and nucleic acid contents.
