The aims of the investigation were to establish whether or not, in the case of skimmed milk powder, a definite correlation exists between the results obtained with the MILKO-SCAN 104 automatic milk testing instrument and those obtained by the standard method, and to determine if the correlation is consequent between the signal given by the MILKO-SCAN 104 instrument upon testing the reconstituted milk from skimmed milk powder and the values as determined by the standard method (Rose-Gottlieb). The determination of the fat content with the MILKO-SCAN infrared spectrophotometer is based on measuring the absorption of the carbonyl group present as a fatty acid glyceride in ester bond. Since there was no correlation found between the results as obtained by the 2 different methods, the only method for the determination of the fat content in skimmed milk powder with satisfactory accuracy is the Rose-Gottlieb method.
