Spanish; Castilian. The assessment of new dietary fiber sources, requires the development of technologies allowing the obtainment of good quality products. Therefore the objective of this research was the study of both washing and particle size influence on neutral detergent fiber and pectic substances content of the powder obtained from tangerine peels. The following factors were studied: particle size, both 5 and 15 mm particles and washing a 10 minutes wash with agitation using both hot (90-95 deg C) and room temperature water. Total sugars, neutral detergent fiber, pectic substances and water holding capacity were determined in the final product. Best result for higher values of neutral detergent fiber, pectic substances and water holding capacity were obtained by milling peels to 15 mm and hot water washing.
