English. After framing the cover crops in a context of sustainable agriculture, the Authors give a classification of such crops. The choices of the species to be grown are later discussed as well as their role in many agronomic and environmental aspects, particulary soil erosion and chemical and fertilizer release into the environment. At last, the paper deals with the present research on the subject in Italy, and outlines some final considerations.
