Whole rapeseeds and their cotyledons and embryos were investigated. Dietary fiber was isolated from raw, incubated and digested with cellulase material acc. to Schweizer's and Wursh's method. The contents of calcium, magnesium, manganese, iron, zinc and copper were determined with atomic absorption spectrometry. The contents of the analysed mineral compounds in obtained dietary fiber were high. The differences of the content of mineral compounds in dietary fiber from the cotyledons and embryos and the effect of incubation and digestion with cellulase on the results were found.
