ITALIANO: Il cioccolato ha giocato e tuttora gioca un ruolo da protagonista nell'industria dolciaria: attualmente, nonostante una sua immagine poco salutistica, il consumo continua ad aumentare. Nel presente lavoro ne viene analizzato il mercato, al fine di evidenziarne l'entita' e le caratterizzazioni, mettendo in luce le sue possibili ripercussioni sul mercato del cacao e delle altre materie prime indispensabili alla produzione del cioccolato.

In this work we analyze the chocolate market showing the value and its characterizations, laying stress on possible repercussions on cocoa market and on other raw materials market which are necessary for chocolate production.
