Cv. Desiree, Atica and Ultimus potatoes, cultivated by agricultures located in San Juan de la Cota, Province of Osorno, X Region, have presented varied postharvest obstacles. The present assay was done after the verification of abscence of phytopathogenic agents. The potatoes cultivars were planted using two fertilization sources: organic and chemical. The main objectives were: to determine the influence of two kinds of fertilization, organic and inorganic in the manifestation of physiological disorders, on seed potatoes as on the ones for consumption and its influence in quality. Potatoes alterations were caused by the so called hollow heart, ferruginous stain and black heart physiological disorders, which were identified and characterized at histological level using histological techniques and differential tints. As conclusion there would exist an interaction among the analyzed physiological disorders as they present similarities in relation to tissue and structures affected, varying in the intensity of the damage, and that would be in the present study, directly proportional to the type of fertilization and culture.
