The presence, the number and the species of aerobic spores in 70 raw milk samples obtained from 3 dairy industries of northern Greece were studied. The milk samples were heat treated at 80 deg C for 10 min and at 100 deg C for 30 min. After heating at 80 deg C for 10 min most samples had a number of mesophilic organisms >100/ml and thermophilic <100/ml (mean content 7.540/ml and 39/ml respectively). After heating at 100 deg C for 30 min most samples had a number of mesophilic and thermophilic spores 1-100/ml (mean content 315/ml and 24/ml respectively). A number of 177 bacillus strains were isolated from the milk heated at 80 deg C for 10 min belonging to the species B. licheniformis (occurs 57.1%), B. cereus (occurs 9.0%), B. polymyxa (occurs 7.9%), B. coagulans (occurs 6.8%), B. pantothenicus (occurs 5.6%) and B. macerans (occurs 5.0%). Other species (B. circulans, B. firmus, B. sphaericus, B. alvei and B. megaterium) occurred less frequently. From milk heated at 100 deg C for 30 min, 62 isolates were identified as B. licheniformis (occurs 32.2%) B. pantothenicus (occurs 19.4%), B. cereus (occurs 16.1%), B. coagulans (occurs 16.1%) and B. sphaericus (occurs 9.7%). Strains belonging to the species B. macerans and B. megaterium were less frequently isolated.
