Shelf-stable processed apple products [in Bangladesh].

Apple was analysed for total soluble solids, total sugar, acidity, ascorbic acid, ash content and pH, jelly, jam, squash, preserves and candies were prepared from apple. These products were analysed for proximate composition. The total soluble solids content in jelly, jam and squash were 67,66.5 and 40% respectively and that of acidity were 0.84,0.70 and 1.25% respectively. According to the taste panelists the jelly, jam, squash and preserves prepared were of excellent quality and candies were of good quality. All the processed products were shelf-stable at ambient temperature up to 12 months.
