A machine consisting of a set of 20 stainless steel tubes and an electric oven was developed and tested for the preparation of 'lemang'. The cost of the machine is about M$2 900.00. It is operated under controlled temperatures. The machine was able to cook 20 tubes of 'lemang' per batch in 2 h with a thermal efficiency of about 40 percent. About 90 percent of the raw material used (glutinous rice, coconut milk, salt and 'asam keping' extract) was converted to cooked 'lemang'. A single tube of product measured 42 cm long, 4.5 cm in diameter and weighed about 780 g. 'Lemang' prepared by this method was found to be comparable in eating quality with the traditional 'lemang'. The production cost of each tube of the product was estimated at M$1.70.
