Changes in carbohydrates during kernel development and after harvest of a Philippine supersweet corn cultivar.

Kernel weight of sweet corn (cv Asukan) increased by more than 140% from 51 g at 12 days after pollination (DAP) to 120 g at 20 DAP, while moisture decreased by only 10% during this period. Total alcohol-soluble gases (TAS) content increased significantly from 20.5% at 12 DAP to 31.4% at 15 DAP and decreased to 18.7% at 20 DAP. A similar trend was obtained with total reducing sugar (TRS). Alcohol insoluble sugar (AIS) (consisting of starch and water-soluble polysaccharides) was about 20% during this period. During 72 hours storage, moisture decreased by 5% or less when stored at room temperature (25-28 deg C) and in the refrigerator (4-6 deg C). At 25-28 deg C, TAS increased in the DAP sample from 20.5% to 27.4% after 6 h and decreased thereafter to 14.9% after 72 h. TAS in both 15 DAP and 20 DAP decreased by 60% after 72 h. TRS had similar trends as TAS. AIS content was relatively constant in the 12 DAP samples stored at room temperature during the 72 hours storage. At 4-6 deg C, AIS decreased by 40% in the 12 DAP and increased by 34 and 20% in the other samples stored for 72 hours. In general, the 15 DAP and 20 DAP sweet corn samples were both highly acceptable and had similar flavor, sweetness and hardness qualities. After 72 h storage, refrigerated samples were more acceptable than the sample stored at room temperature.
