Carcinogenic and mutagenic substances in human diet and their possible relevance to the incidence of human cancer. Human diet may contain a number of toxic substances of natural origin, among these a number of proven animal carcinogens and a much higher number of potential carcinogens. In addition to these naturally occurring substances the storage and preparation of the food might lead to the formation of additional substances having genotoxic effect in in vitro experiments, such as the Salmonella/mammalian microsome test. Acknowledging the predictive value for carcinogenicity of some of these short term mutagenicity tests such positive results have to be considered as a warning signal. The presence of this kind of genotoxic substances in the human diet has formed part of the base for present hypotheses indicating, that a substantial part of human cancer, up to 45 per cent, may be related to lifestyle factors connected to the composition and preparation of the diet.
