Nutrient composition of canned food in Chiang Mai, Thailand.

Canned food products have become very important in everyday life because of socio-economic changes. The consumption of canned food products as major constituents of a normal diet, is not uncommon in the population living in Chiang Mai City. The food processing industry can play a useful role at the community level. The aim of the study is to supplement the Thai Food Consumption Table after analyzing the nutrient composition of the most important processed foods available in Chiang Mai. The product samples were collected from different zones in the city. These canned food products include fish, meat, vegetables, fruit juices, and cereals. The proximate and the mineral composition of these processed foods was determined. Results indicated that the protein content of the fish and meat products varies from 10-40 g/100 g while the protein content in the vegetable products is low (0.3-3 g/110 g) for the same price/can. The data indicated that the nutritive value of the processed foods, such as protein content, was low than the fresh foods on the same products. However, the sodium content was remarkably high (3618 mg/100 g) in these processed foods.
