In order to establish microbial composition of tea fungus, type of relationships between microorganisms and selected metabolically compatible strains, microorganisms of tea fungus were isolated, identified and selected. From the culture of tea fungus it was isolated and identified two species of acetic acid bacteria (Acetobacter xylinum and two strains of Gluconobacter oxydans) and five species of yeasts (Schizosaccharomyces pombe, Saccharomyces bisporus, Kloeckera apiculata, Torula sp. and Candida sp.). Metabolically compatible relationship was stated between acetic acid bacteria and yeasts, and for that reason all isolated species entered starter bacteria.
