In the Canary Isles, there are many forms of preparation of kid for human consumption. Unfortunately, all coincide in one aspect which depreciates the meat quality; the primary material lacks optimum conditions of the premature age (normally before 10 days) of killing, being the main reason for killing so early, the price reached by the milk for cheese making. A study was carried out in 76 kids (43 male and 33 female) belonging to the Canarian Caprine Group, which were killed with a live weight between 4 and 12 kg, in order to find out the evolution of the different parameters and the interest in producing heavier carcasses, at the same time realizing an alometria study. Also the yield of commercial carcasses increases alongside the live killing weight bettering 41,98% (42,46% and 41,51% in male and female) to 4 kg to 48,11 (50,67% and 45.55%, male and female) to 12 kg supposed to be a positive alimeter (1,197 and 1,097 in male and female) there being evident a marked effect in favour of the male (P <0,01) from 6 kg live killing weight. On the other hand, head, skin, autopods and different offals, present a negative alometria which elevates the killing weight, in function of the precocity of these elements, which is positive for the carcass yield.
