Fermentable water-extractable sugars content in stalks of saccharine corn (var. E-41), Funk's corn (var. G-5050) and sweet sorghum (varieties Wiley, Wray, Keller, Dale and Rio), as well as alcohol yield in the fermentation of the extracts (testing 25 strains of yeast), were determined. In the sweet sorghum stalks a great amount of fermentable sugars were found, reaching 33% (d.b.) in the Wray variety; in the saccharine and Funk's corns this amount was 27 and 11%, respectively. Fermentation yield was very high, ranging between 85 and 95% and the theoretical maximum when broths were fermented with the adequate yeast.
