This paper investigates the influence of protein malnutrition and bad-quality protein nutrition on metabolic ways of proteins. The investigation was performed upon 29 male rats of Wistar type, of uniform weight at the beginning of the experiment (about 160 g) and of equal age (about 1 month). The experimental animals were divided into 3 groups - group N with 5% caseine, group V with 20% caseine and group G with 20% gelatine in the cake. The total amino acids consumption per rat was as follows:group N 5.24 mili Mol/rat, group V 20.86 mili Mol/rat and group G 19.71 mili Mol/rat. The rats which consumed gelatin as the only protein source in the food (group G) were losing weight during the 10-day experimental period. Groups N and V which were given casein adapted to the new feeding conditions during the first 4 days. In the first days of the experiment they were losing weight, but by the end they were gaining it. The largest liver share in the totl weight was in the high-protein group V and the smallest in the group consuming gelatin (group G). The rats in group G). The rats in group G, as well as those in the low-protein casein group (N) had very uniform protein values in the liver, lower compared with group V, this being the result of reduced protein biosynthesis, stipulated by the reduced inflow of amino acids from outside. The protein component in the food influenced the amino acids pool in the blood plasma and liver. The plasma of the rats with inadequate protein nutrition had a higher content of unimportant amino acids, so the ratio of important and unimportant amino acids is increased. The rats in group G had a much higher content of the amino acids glycerine, serine.
