Effects of irradiation doses of 3, 5 and 7 kGy on salted dried Sipat Siam fish having moisture content of 25, 30 and 35 percent packed in polyethylene bags were studied on lipid oxidation. It was found through TBA analyses that the quantity of malonaldehyde produced during storage at 28 deg.celsius increases more rapidly after 8 to 16 days but decreased after that period. The quantity of malonaldehyde produced at all levels of those moisture content was very similar having not more than 5 mg of malonaldehyde per 1000 gm of sample. In the study it was also found that the loss of vitamin B1 and B2 was the highest after irradiation at 7 kGy. The average loss of vitamin B1 subjected to irradiation was less than the loss occurred through salt curing and dehydration techniques. The loss of vitamin B2 was the highest through curing in 12 percent salt. The total loss of both vitamins in the fish subjected to curing, dehydration and irradiation was very similar, i.e., at about 80 percent. The soaking of the fish in a solution of 0.3 % tripolyphosphate having 2 percent sodium chloride for a period of 10 minutes reduced the loss of vitamin B1 to a great deal during the curing step.
