In the paper a morphological characteristic of buckwheat forms with improved anthocyan coloration of plants is presented. Distinct variation in anthocyan content year by year of cultivation and in various plant forms is shown. Recommendations are given for involving buckwheat forms with improved anthocyan content in the breeding process, aimed at improving resistance in varieties in stressed environmental factors. Suggestions are made on the possibility of using the pigment present in buckwheat plants as dye material for food industry.
