The relationship between sugar and non-precipitable non-sugar is of prime importance for the internal quality of sugar beet. Non-precipitable non-sugar influences extraction of white sugar from sugar subjected to this process as well as on the performance of crystallisation to arrive at a constant sugar quality. Under the present technological conditions of soda requirement non precipitable non-sugar practically provides a proportional quantity of sugar molasses. In quality formulas, alkalines, taken as a unit, were given a lower coefficient than formerly. Besides the volume of non-precipitable non-sugar the ion composition is of paramount importance. This is characterised by "beet alkalinity". When it comes to managing this beet alkalinity through choice of variety and fertiliser, plant requirement has to be taken into consideration so as to optimise root sugar accumulation.
