Sugar cane is considered one of the important crops in Egypt because the production of sugar depends mainly on it. Although the production of sugar covers the needs of sugars industrialization, there is a wide gap between the local production and consumption of sugar. The main objectives of this study aimed at knowing the cause of this gab. The study depends on published data through (1985-1999). The study showed that about 87 of the sugar production is produced from sugar cane. It is clear that through the period (1985-1999) the production of sugar cane was about 12381 S.T, in the same period the production of sugar was 1011 S.T, the consumption was about 1540 S.T, there is a wide gap 563 S.T, the rate of satisfaction is about 63 , nearly in 1999 this rate equal 73 . With regard to sugar industry in Egypt, the study revealed that there are many problems faced the sugar industry, some of them related to low the industrialization capacity of factories, while the others related to decrease the amount of sugar - cane which is given to factories by producers. Finally the study recommended some recommendation to achieve the equilibrium between production of sugar in Egypt and its consumption in one hand and to protect the sugar industry in Egypt from the future international changes.
