This paper presents the results of investigations into muscles, Musculus semimembranosus, Musculus longissimus dorsi and Musculus deltoideus in one year old wild swines. Investigations included determination of the chemical composition, colours, course of postmortal changes and histochemical condition of muscle tissues. By analysing the obtained results it can be concluded that meat of wild swines is of high nutritive value because it has a high protein level (over 22%), relatively less fats and little connective tissue (about 0.5%). The investigated muscles have a high quantity of starting glycogen (7.58-18.82 mg/g) which significantly reduces postmortally but does not effect changes of pH value. Histochemical analysis indicate the existance of good differentiation of muscle tissues in 3 reactions of staining. Similarly to the differentiation of muscle tissue types according to staining for succinatedehydrogenase, differentiation of muscle tissues to phospholipids and neutral fats can be included. No significant differences are established in histochemical picture of three investigated muscles.
