The mathematical model of rehydration based on the general theory of mass and heat transfer laws is formulated in the present work. The model allows for determination of temperature distribution and concentration distribution of both dry matter and water in time and space inside rehydrated material. The developed model takes into account changeable boundary conditions and changes of material geometry
