There are many possibilities of contamination swine and beef carcasses in slaughterhouse with pathogenic bacteria. It certainly which depends on hygiene procedures during. Our aim was to find microbiological contamination of swine and beef carcasses by isolation aerobic mesophilc bacteria as hygiene indicator, Salmonella spp. and Enterobacteriaceae as indicator of fecal contamination.
