Slaughter characteristics of young hen from Issa Brawn and De Calb hybrids | Klanične karakteristike mesa jarke nesilje različitih hibridnih linija

The paper presents the investigation of slaughter results of young hen from Issa Brawn and De Calb, slaughtered at 17 weeks of age to determine the differences between hybrids. The average carcass dressing percent of young hen from Issa Brawn was 78.09%, and 70.78% of young hen from De Calb hybrids. Chemical composition of meat from hybrids Issa Brawn was : water 76.32%, 20.38% protein, fat 1.6%, ash 1.15%, and De Calb: water 75.59%, 21.92% protein, fat 0.30%, ash 1.13%, pH value of meat after cooling at young hen from Issa Brawn was 6.06 and 5.79 from De Calb.
