Fermented milk products include very large group of products, which differ according to type from milk from which they were made, type of fermentation, consistency, content of milk fat, type of supplement and others. Among the fermented milk product in the world and our country best known and most common is yogurt. In addition to the classic – native of yogurt, it was developed a range of fermented products, which have other characteristics, such as acidophilus milk, kefir, yogurt without cholesterol, vitaminized yogurt, dietary yogurts with lower energy value, etc. The functional foods are high-valuable food products intended for special categories of consumers. To optimally protect this valuable content, during declared shelf life, packaging materials and packaging must have good, defined properties. Properties of packaging materials, essential to maintaining the integrity and quality of food are physical-mechanical and barrier characteristics. Barrier properties of packaging materials, regarding to phenomena of light, gas and water vapor permeability, significantly affect packaged content. There is a choice of different packaging materials with good barrier properties to light and oxygen, primarily. For example, colored glass containers, ceramic containers, cans or polymer multilayer packaging, etc. Taking into account variety of products, specific technologies, specific conditions of distribution and warehousing applications, different packaging materials are chosen or their combinations. Fermented dairy products are usually packed in forms of cups and bottles, made of polymer materials. Previously, glass containers were used in the form of bottles, and ceramic packaging in the form of various vessels. All these materials have appropriate strengths and weakness.
