The aim of this work was to determine the heavy metals content in the samples of fermented milk products, and to point out the possible causes of heavy metals contamination during the production process. Determination of heavy metals in fermented milk products is very important, because of their potential toxicity for humans and animals. The heavy metals determination was carried out simultaneously in examined samples of fermented milk products using an automatic system for chronopotentiometric and potentiometric stripping analysis (PSA. PSA, an electroanalytical technique with high sensitivity and selectivity, was applied using the thin film mercury electrode as a working electrode, and with the dissolved oxygen as an oxidant. For determining the optimal conditions of the PSA the effect of the electrolysis potential, of the solution stirring rate, electrolysis time, and of the type and concentration of the supporting electrolyte were examined. All experimental parameters of the PSA were investigated in the matrix of the sample, and were defined on the basis of five replicates for each examined parameter value.
