Improving the antioxidant activity of sponge semis | Повышение антиоксидантной активности бисквитных полуфабрикатов

English. To improve the technological parameters of biscuit dough, to increase the yield, quality, food value and bioprotective properties of finished products by enhancing their antioxidant activity, a meadow clover syrup was used. There is given a technology for preparing the syrup (a decoction of clover grass and sugar boiled down to the content of dry matters of 70%) which was incorporated in an amount of 10, 15 and 20% of the total sugar weight before beating up the egg-sugar mixture (ESM). Herewith, the biscuit semi-products had a specific volume increased by 1.51; 10.54 and 9.64%, porosity by 0; 1.96 and 1.19%, the total crumb deformation by 10.76; 9.76 and 9.11% and plasticity by 16.74; 8.42 and 11.05%, respectively. The baking duration of samples added with the clover syrup decreased 10, 15 and 15%, respectively, compared to the control. The products were characterized by a more saturated taste, tender crumb, has small thin-walled, overall cut uniform pores, the crumb was lighter, more elastic, easily become clenched and reshaped. A possibility to incorporate the clover syrup instead of 5, 10 and 15% of ESM for production of biscuit semi-product has been investigated. Increasing the specific volume, porosity and total deformation of crumb was observed only when replacement was 5-10%. The duration growth of providing stable foam by beating up the ESM by 5; 7.5 and 25%, reducing the baling time by 20% for all experimental samples of biscuit semi-products, reducing the oven loss and increasing the yield the biscuit semi-products compared to the control were observed. Adding 10-20% of the clover syrup of the total sugar weight results in increasing the total content of antioxidants in the biscuit semi-products by 47.34-49.60 mg/100 g

Для улучшения технологических параметров бисквитного теста, повышения выхода, качества, пищевой ценности и биопротекторных свойств готовых изделий путем увеличения их антиоксидантной активности использовали сироп клевера лугового (СК). Приведена технология приготовления СК (уваренный до содержания сухих в-в 70% отвар травы клевера с сахаром), который вводили в количестве 10, 15 и 20% от общей массы сахара перед взбиванием яично-сахарной смеси (ЯСС). При этом у бисквитных полуфабрикатов (БП) увеличивался удельный объем на 1,51; 10,54 и 9,64%, пористость – на 0; 1,96 и 1,39%, общая деформация мякиша – на 10,76; 9,76 и 9,11% и пластичность – на 16,74; 8,42 и 11,05% соответственно. Продолжительность выпечки образцов с добавлением СК уменьшалась на 10, 15 и 15% соответственно по сравнению с контролем. Изделия отличались более насыщенным вкусом, нежным мякишем, имели мелкие тонкостенные, равномерные по всей поверхности среза поры, мякиш был более светлым, эластичным, легко сжимался и сразу же восстанавливал форму. Исследована возможность внесения СК взамен 5, 10 и 15% ЯСС при производстве БП. Увеличение удельного объема, пористости и общей деформации мякиша наблюдалось только при 5-10%-ной замене. Отмечен рост продолжительности получения устойчивой пены при взбивании ЯСС на 5; 7,5 и 25%, сокращение продолжительности выпечки на 20% для всех опытных образцов БП, снижение упека на 33,07; 30,98 и 14,93% и повышение выхода БП на 3,79; 2,94 и 0,95% соответственно в сравнении с контролем. Добавление 10-20% СК от общей массы сахара приводит к повышению суммарного содержания антиоксидантов в БП на 47,34-49,60 мг/100 г.
