Functional food from the fins of alaska skate | Функциональные пищевые продукты на основе плавников щитоносных скатов

English. Skates are cartilage fish that sets conditions for using this raw as a source of biologically active components — hexosamines for manufacturing a functional food production. The output of fins from Alaska skate is estimated as 28 % on average, and the body weight depends on fish age as a power function. Chemical composition of the fins tissue doesn't depend on size and weight, but the content of hexosamines increases with age. Hydrothermal processing of the fins causes some dehydration of tissue (in 1.2-4.0%), content of low-molecular nitrogen-containing substances and carbamide decreases, and content of nitrogen-containing protein substances increases. Hexosamines from Alaska skate are stable enough and their level does not change practically after thermal processing ( 80% of them are not destroying, by dry weight). The high content of hexosamines allows using the Alaska skate as a raw material for functional food that provides a human organism by micronutrients necessary for restoration of connecting tissues, articular liquid, tendons, cartilage tissue. Recipes of canned fish and preserves from the alaska skate fins with addition of forcemeat from salmons and vegetables are proposed. Agar is used as stabilizer for the tinned production, and for the preserves — both agar and carrageenan could be used as a binding agent and sodium benzoat as a conserving agent. The developed products from alaska skate fins can provide about 20% of daily requirements of a human in hexosamines. The products manufactured from 5-year-old and elder skates with weight 1.5 kg have the highest content of micronutrients and could be considered as a functional food.

Russian. Показано, что плавники щитоносных скатов являются прекрасным сырьем для производства функциональной пищевой продукции. Установлено, что с увеличением продолжительности жизни рыбы выход плавников незначительно уменьшается, в среднем составляет 28%. В общем химическом составе с увеличением размеров и массы рыбы достоверных различий не наблюдается. Установлено, что с возрастом в хрящевой ткани происходит накопление биологически активных компонентов — гексозаминов, обладающих устойчивостью к действию высоких температур, что позволило рекомендовать плавники щитоносных скатов в качестве сырья для производства функциональной пищевой продукции длительного срока хранения — консервов и пресервов. Разработаны рецептуры продукции на основе фаршей из плавников щитоносных скатов с добавлением фарша из дальневосточных лососей и овощей, в которых в качестве стабилизаторов использованы агар или каррагинан, а в качестве консерванта в пресервах — бензойнокислый натрий. Разработанные рецептуры могут гарантировать содержание в консервах и пресервах не менее 20% суточной потребности человека в гексозаминах, а разработанная продукция — являться функциональной пищевой продукцией по содержанию этих микронутриентов при условии использования для ее производства плавников Щитоносных скатов не менее 5-летнего возраста.
