English. Pekmez is a traditional product produced from sugar rich fruits by extraction and boiling processes. It is known for many years that pekmez is a nutritious for human health. Nowadays there is an increasing demand for natural product. For that reason also consumption of pekmez is expected to increase. However, sticky, viscous characteristics of pekmez cause difficulties in food processing. In this study spray drying technique is used to produce pekmez powder to facilitate the usage of pekmez.

Bu çalışma kapsamında ham madde olarak ülkemizde üretimi yapılan; toplam fenolik madde miktarı yüksek ve antioksidan açısından zengin olduğu saptanmış olan andız ve keçiboynuzu pekmezleri kullanılmıştır. Püskürterek kurutma işlemi laboratuar ve pilot ölçekli kurutucular kullanılarak gerçekleştirilmiştir.
