Physical and biochemical characteristics of the musculature of Criollo goats in Northern Mexico

Groups of castrate male Criollo goats were slaughtered at 12, 16, 20 and 24 kg liveweights after being reared on natural rangeland with concentrate supplementation. After slaughter the carcasses were chilled for 24 hours at 2°C and the total lean then dissected from the left halves of the carcasses. The total lean was subjected to a proximate analysis, and ultimate pH, hydroxyproline content and myoglobin content were also measured. M. Biceps femoris and M. Longissimus dorsi were dissected out of the right halves of the carcasses. Various organoleptic quality parameters were measured on these muscles in addition to chemical analysis. The moisture content of the total lean decreased steadily with increasing slaughter weight to a level of approximately 77 percent in the heaviest group. Ash and protein content tended to fall with intramuscular fat increasing to approximately 3 percent of the wet tissue weight. The ultimate pH was high in all of the slaughter groups, usually being more than pH 6.0. While the collagen content of the M. Biceps femoris and M. Longissimus dorsi fell with increasing slaughter weight, tenderness in these muscles did not. The data indicate that the parameters measured on the carcasses of Criollo goats show similar tendencies in relation to slaughter weight as they do in the carcasses of cattle and sheep
