Quality of malting barley crop 2011 in the Czech Republic
2012
Hartman, I., Vyzkumny Ustav Pivovarsky a Sladarsky, Brno (Czech Republic)
This study evaluates the quality of malting barley from the 2011 harvest in the Czech Republic. In comparison with long-term values, starch levels and the portion of sieving fractions over 2.5 mm were above the average, whereas the level of nitrogenous substances was below the average. In some lots the sprouting (both visible and hidden) of caryopses occurred due to the higher moisture content. This negatively affected the germination capacity of barley lots. With appropriately chosen malting technology, barley lots with good germinative capacity produced good quality malt with the above average values of extract.
