The accumulation of glucose, fructose, sucrose and fructans in barley plants during kernel filling was studied in dependence of nitrogen supply (0, 150 and 300 mg N/kg soil). At early milky stage unfertilized plants accumulated more glucose in the stems and spikes. Fructose content of stems was higher in unfertilized plants and at early dough stage. The sucrose of stems varied relatively slight during kernel filling, but in spikes it was reduced almost twice at early dough stage. Fructan accumulation declined during kernel filling. Nitrogen deficiency increased fructan accumulation in barley at early milky stage and did not affect fructan contents at early dough stages.
